What are the latest trends?

Side cuts are still very popular. And vegetarian foods are naturally also gaining in importance in the barbecue world. Side dishes are another key trend and they’re becoming more and more creative. Potatoes are now getting competition from delicious oxheart cabbage and pumpkin creations.

How important is regional sourcing?

Regional sourcing and sustainability are both important when it comes to barbecue foods Unfortunately, though, the regional farmers aren’t able to meet the high demand for barbecue meat on their own, which is why meat products are still being imported.

For me, INTERNORGA is the place to discover the latest trends. It gives me an overview of the entire out-of-home market and insights into sector developments.
