International dishes remain but will be served in a new and more sustainable way using regional ingredients. Basic does not exist anymore. Variety and colorfulness are desired. Therefore, the pop-up gastronomy is literally popping up. Once it was ridiculed as a one-hit wonder, however, now it is one of the trend-setters for the restaurant industry. Topics such as sustainability can be used and implemented easily. In some places, the people behind pop-up restaurants are established restaurateurs who want to try out or test new things. Seasonal trends and innovative promotions can thus be tried out more easily without having to make long-term commitments.

The focus is also on the megatrend of connectivity to stay in touch anytime and anywhere. The desire for local independence is also very popular. Online retailers are profiting, as are the catering industry in the form of the strengthened delivery and take-away sales channels. Today it is certain that the working environment is hybrid. There is less consumption in the city centers and in company catering, but more in the districts. Moreover, bakeries are also becoming more gastro-oriented and are offering hot and warm snacks.
